PDM Group, the UK's leading food waste recycler, is celebrating the sustainable success of The Savoy, London, after the five star hotel was crowned winner of the Best Food Waste Strategy category in this year's Sustainable Restaurant Awards.
PDM has been working with The Savoy since 2010 to deliver an effective waste management strategy that sees all food waste generated across the hotel's guest and staff catering operations utilised as a valuable resource.
The hotel works to minimise its food waste as much as possible through responsible purchasing. However, plate scrapings, off-cuts and stock pot waste, mean that some food waste is inevitable and the hotel is committed to handling these unavoidable aspects in the most sustainable way. It segregates waste using dedicated bins and kitchen caddies before emptying it into larger bins, which are collected on a daily basis by PDM. All food waste collected is then processed via PDM's network of recycling and anaerobic digestion plants.
Through this partnership, The Savoy recycled enough food waste to create 216 megawatt hours of renewable energy and saved more than 200 tonnes of CO2 in 2012 alone.
These achievements contributed to the hotel winning the Best Food Waste Strategy title in the awards, held annually by the Sustainable Restaurant Association to highlight best practice across the hospitality industry.
